Hi sweet friends! It has been a crazy couple of weeks here in Ft Lauderdale! Kris and I traveled to Vail with his parents for a couple of days (my first trip to CO ever, pictures to follow soon!) but after we got back I got super sick. However, after a round of antibiotics I seem to be on the road to recovery!
On Sunday I decided to make several make ahead meals for the week ahead so I can save time during the week. I have never taken this approach to cooking before, but I am loving it so far!
First up are these amazing Corn, Black Bean and Beef Empanadas. Since moving to South Florida, I have completely fallen in love with empanadas! I individually packaged them up and am storing them in the freezer.
Then I prepped these Classic Stuffed Peppers and froze them. Who knew you could freeze peppers? We are planning on having them for dinner tomorrow!
And finally, tonight for dinner we had this Ginger-Garlic Chicken Stir Fry from Rachael Ray. I am normally not the hugest fan of Rachael's recipes, but this was awesome!
The couple of hours spent on Sunday night cooking has been so worth it to reduce my stress this week. I highly recommend it!
xx Meggan
I'm sorry you have been so sick! I didn't realize that you live in Ft. Lauderdale. I'm flying down there tomorrow for a girls' long weekend. Do you have any suggestions of places to eat? You had great recommendations when I went to NYC.

ReplyDeleteGlad you're feeling better! Can't wait to see your Vail photos!
ReplyDeleteI really need to start doing this too. By the time the hubs gets home from work and we take Jack to the park, it's 7:00, and we still have to cook dinner. Everything you made looks delicious!
I've missed you girl! I'm glad you're feeling better! These recipes look fantastic, I can't wait to try that stir fry. I'm with you, Rachel never seems to hit the spot for me, but I'm glad to know that this one was good! Glad to have you back :)
