Midweek Meal Idea: Vegetarian Soppy Joes and Oreo Bark

Happy Tuesday! Last night I had our small group from church over again (we rotate ever 4 weeks) and I decided to make sloppy joes for dinner. I used to dread these in our school cafeteria because I felt like you never knew what exactly they put in there! Well I made two versions of sloppy joes last night because I have been on a vegetarian kick recently and wanted to make a veggie based option. The regular beef version that I made came from the amazing Pioneer Woman here
I found this veggie sloppy joe recipe from a school cookbook that was gifted to me and I made a couple of modifications to it. I forgot to take pictures because I was running around like crazy trying to get ready because I worked late, but wanted to at least share this recipe with you - it was amazing! 

The Snobby Joe - Vegetarian Sloppy Joe
Ingredients
- 1 cup of uncooked lentils
- 4 cups of water
- 1 tblsp olive oil
- 1 medium yellow onion, diced
- 1 green bell pepper, diced
- 2 garlic cloves, minced
- 3 tblsp chili powder
- 2 tsp dried oregano
- 1 tsp salt
- 1 (8 oz) can tomato sauce
- 1/4 cup tomato paste
- worchestire sauce, to taste
- hot sauce, to taste
- pickles to top the sloppy joe, optional
- 4-6 kaiser rolls or sesame bun

Directions
Pour the lentils and water into a small saucepan. Cover and bring to a boil. Once the mixture is boiling, lower the heat and simmer for about 20 minutes, until the lentils are soft. Drain and set aside. About 10 minutes before the lentils are done, preheat a medium-sized saucepan over medium heat. Saute the onion and pepper in the oil for about seven minutes or until softened. Add the garlic and saute for a minute more. Stir in the lentils, chili powder, oregano and salt. Add the tomato sauce and tomato paste. Cook for about 10 minutes. Add the worchestire sauce and/or hot sauce to taste and heat through. Turn off the heat and let the pot sit for about 10 minutes so the flavors combine.

  4. wow that recipe sounds really good. i saw another homemade sloppy joe recipe on another blog today, i love doing things homemade and staying away from the can! and that oreo bark looks amazing i will have to try it!
