Today it officially felt like the beginning fall in Fort Lauderdale even though it was raining all day. I am seriously hoping that this hint of cooler air is not fleeting.
I hosted our small group for dinner and bible study tonight and the cooler air inspired my dinner menu. I decided to make a traditional tomato soup with some non-traditional sandwiches. I discovered some amazing sandwiches from Tom Collichio's cookbook WichCraft. Have you ever heard of this cookbook or been to the WichCraft the restaurant? They serve some incredible sandwiches, it is hard to pick just one!
The two sandwiches that I selected were the Roasted Turkey, Avocado, Bacon, Onion Relish and Aioli on Ciabatta and Gruyere with Carmelized Onions on Rye. These sandwiches did not disappoint and were a fun way to serve a lot of people pretty easily. One of the best parts of this meal is that you can make a lot of it before (tomato soup, sauteed onions, onion relish, etc).

For dessert I made vanilla cake pops for the first time. They turned out fairly well except that the chocolate kept falling off of the pop so I turned them upside down and placed them on waxed paper. I used the bakerella recipe with Pillsbury yellow cake mix. They may not be the prettiest, but they tasted really good!
